Weight Watchers Pizza Roll-Ups

These Weight Watchers Pizza Roll-Ups are filled with pepperoni, sauce and two kind of cheeses — perfect as an appetizer, lunch, dinner or even a midday snack!

For these Pizza Roll-Ups you will need:

Slice and dice 23 turkey pepperoni slices into tiny pieces

Measure out 3 ounces of reduced-fat mozzarella using a FOOD SCALE.

I recommend using a food scale to measure out cheese-it’s more accurate than using measuring cups.

In a medium bowl combine, pizza sauce, pepperoni, mozzarella cheese, and Parmesan cheese

stir until all ingredients have been incorporated.

Place about 2 Tbsp filling slightly below the center of the wrap. Bring the corner that is closest to you up and over and gently tuck it in

Fold in the sides and roll the wrapper tightly. Use a small amount of water to secure the tip of the wrapper.

Repeat until all 10 wraps are completed.

Place a piece of parchment paper on an on a baking sheet.

Lay pizza roll-ups on a baking sheet about 2 inches from each other.

In a small bowl whisk together egg and 1 tsp water until the egg is beaten.

Using a BASTING BRUSH-brush egg wash over the pizza roll-ups.

Bake 15 to 18 minutes or until golden brown

or spray the bottom of the AIR FRYER basket with non-stick cooking spray.

Place the pizza rolls in the basket. Cook for 7-8 or minutes at 390 degrees.

  • 10 Egg Roll Wrappers (I use Nasoya®)
  • 1 cup pizza sauce (I use Great Value)
  • 23 slices turkey pepperoni, sliced and diced ( I use Hormel )
  • 1/2 cup or 3 oz. shredded reduced-fat mozzarella cheese ( I use Market Pantry light mozzarella from Target)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp water

DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. In a medium bowl combine pizza sauce, pepperoni, mozzarella cheese, and Parmesan cheese and stir until all ingredients have been incorporated.
  3. Place one wrap on the work surface with one corner facing you. Place about 2 Tbsp filling slightly below the center of the wrap. Bring the corner that is closest to you up and over and gently tuck it in. Fold in the sides and roll the wrapper tightly. Use a small amount of water to secure the tip of the wrapper.
  4. Repeat until all 10 wraps are completed.
