What’s the Best Gluten-Free Flour to Use?

I would not substitute a single-ingredient flour such as almond flour, coconut flour, or plain rice flour. These flours absorb moisture differently and will change how the batter holds together in the hot oil. If you use another gluten-free blend, choose one designed as a cup-for-cup replacement and expect slight texture differences.

For the glaze, you need confectioners’ sugar, ground cinnamon, and lukewarm water. Add the water gradually so the glaze is thick enough to cling to the fritters, but thin enough to drizzle into those crisp little crevices.

Ingredients

For the fritters

  • ⅜ cup (53 g) all-purpose gluten-free flour blend (Better Batter recommended)
  • 2 tablespoons (18 g) cornstarch
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 7 tablespoons buttermilk
  • 1 egg (50 g out of shell), room temperature
  • 1 large apple, peeled, cored, and diced (firm apple)
  • Neutral oil, for frying (grapeseed oil or blend with vegetable shortening)

For the glaze

  • 1 cup (115 g) confectioners’ sugar
  • ½ teaspoon ground cinnamon
  • 1 tablespoon lukewarm water (plus more as needed)

Instructions

  1. In a large bowl, whisk together the gluten-free flour blend, cornstarch, granulated sugar, baking powder, and salt until well combined.
  2. Add the peeled, cored, and diced apple (cut into thumbnail-size pieces) to the dry ingredients and toss to coat evenly.
  3. Pour 3 inches of oil into a medium heavy-bottomed pot. Attach a thermometer and heat to 350∘F over medium-high heat.
  4. Whisk together the buttermilk and egg in a small bowl. Add to the dry ingredients and apples, mixing just until combined.
  5. Once the oil reaches the temperature, scoop the batter into the hot oil in ¼-cup portions. Do not overcrowd the pot. Gently flatten each portion slightly.
  6. Fry for about 2 minutes until lightly golden on the bottom, then flip and cook another 2 minutes until golden brown. Turn again if needed for even browning.
  7. Remove fritters and place on a wire rack over paper towels to drain and cool. Repeat with remaining batter.
  8. In a small bowl, mix confectioners’ sugar and cinnamon. Stir in 1 tablespoon water until a thick glaze forms. Add more water drop by drop until it reaches a drizzle consistency.
  9. Drizzle glaze over cooled fritters and let set before serving.
