HOW DO I MAKE MY WHITE CHICKEN ENCHILADAS?

1. Preheat oven to 350 degrees.

2. Combine, drained chicken, cream cheese and green chiles in a large mixing bowl.

3. Stir until well combined.

4. Spray a baking dish with non-stick cooking spray (13 x 9 Baking Dish).

5. Use 1/4 cup of chicken mixture to top each tortilla.

6. Roll up and place the seam down in the prepared baking dish.

7. Repeat for all 12 tortillas.

8. Pour enchilada sauce evenly over the enchiladas.

9. Sprinkle cheese evenly over the top of the sauce.

10. Sprinkle diced green onions and jalapeños over the top of the cheese, ( optional).

11. Bake for 20 minutes or until bubbly.

  • 2 (12.5 oz. ) cans white chicken breast, drained ( I love Kirkland brand) or 10 oz. cooked, skinless, boneless, shredded chicken breasts
  • 1 ( 4 oz.) can of roasted, peeled green chiles
  • 10 oz. can of green enchilada sauce
  • 12 tortillas-one points tortillas such as Mission low carb, La Banderita® Carb Counter, or Ole Extreme Wellness tortillas
  • 1/2 cup fat-free or light shredded cheddar cheese
  • 3 green onions, diced for garnish (optional)
  • 2 spoon canned jalapeños, diced for garnish ( optional)
