HOW DO I MAKE MY BLUEBERRY BANANA MUFFINS?
1. Preheat the oven to 375 degrees.
2. Line a muffin pan with foil liners.
3. In a medium-sized mixing bowl, whisk ( using a hand whisk) the Kodiak pancake mix, baking powder, sweetener, applesauce, water, egg, and vanilla.
4. Mix until combined.
5. Gently fold in mashed bananas. Then the blueberries.
6. Divide batter evenly over 15 muffin wells.
7. Fill each muffin well 3/4 of the way full.
8. Bake for 18 to 20 minutes. Cool completely.
9. You can store leftovers in an air-tight container on the counter for 1 day or in the fridge for up to a week.
