Gluten-Free Chicken Fritters Ingredients
Ingredients:
- 1½ pounds chicken tenders, diced
- 2 to 3 green onions, sliced
- 4 oz fresh mozzarella cheese, shredded
- â…“ cup Smart Balance Mayo – gluten-free
- â…“ cup Cup4Cup multipurpose flour – gluten-free
- 2 cloves garlic, minced
- 2 eggs
- salt and pepper
- olive oil for frying
Instructions:
- In a large bowl mix all the ingredients except the olive oil.
- Cover and refrigerate for at least 2 hours.
- Heat a non-stick pan to medium heat and add a splash of olive oil.
- Scoop about 2 tablespoons of the chicken mixture and lightly flatten, fry uncovered for about 3 minutes per side or until golden.
- Transfer to a plate with paper towels.
- Cook the rest adding more olive oil as needed.
- Serve and enjoy!
