Pumpkin Spice Pancakes Ingredients
Ingredients:
- 2 large egg whites
- 1/2 cup of Kodiak buttermilk pancake mix combined with 1/3 cup Clean Simple Eats Pumpkin Pie protein powder or you can use 2/3 cup self-rising flour
- 1/2 cup canned pumpkin
- 1/4 cup water
- 1 large egg or you can use 4 Tbsp liquid egg
- 1 Tbsp of Lakanto Classic Monkfruit Sweetener
- 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
Directions
- Combine 2 egg whites in a large mixing bowl and using a hand mixer, beat until nice and foamy.
- In another mixing bowl combine the remaining ingredients. Whisk until all ingredients are incorporated.
- Gently fold in egg whites.
- Spray a non-stick skillet with non-stick cooking spray and heat the skillet on medium-high.
- Scoop pancake batter into prepared pan using 1/4 cup measuring cup, to make 4-inch pancakes.
- Cook the pancakes on medium-high until little bubbles start to form at the top of the pancakes. About 2 to 4 minutes.
- Flip and cook for an additional 2 to 4 minutes until lightly golden.
- Top with 4 Tbsp of fat-free Reddi Whip and 3 Tbsp Mrs Butterworth’s sugar-free syrup for 0 points, and sprinkle a little cinnamon over the top, if desired.
