Chicken Quesadillas Ingredients
INGREDIENTS
- 4 Flour tortillas such as Carb Counter or Ole Extreme Wellness Tortillas
- 2 to 3 teaspoons of fajita seasoning
- 1 cup of low-fat cheddar cheese or you can use reduced-fat Mexican Cheese Blend
- 2 chicken breasts
NSTRUCTIONS
- Rub the chicken in the fajita seasoning.
- Then cook the chicken breasts in a skillet until done.
- When the internal temperature of the chicken reaches 165 degrees, know it’s done.
- You can use rotisserie chicken.
- Then place 1 tortilla on a non-stick skillet and spray it with cooking Spray.
- Place ¼ cup of cheese and ¼ cup of chicken on top and the other tortilla.
- The quesadilla will be done on 1 side when the tortilla is brown and the cheese is melted.
- Flip and wait till the other side is brown.

I assume you shred the chicken after cooking? And you say 5 pts per serving (1 whole quesadilla) which would require 2 flour tortillas but only 4 are required in the recipe and the recipe serves 4. Wouldn’t you need 8 tortillas to serve 4?
